Assistant Manager, Food & Beverage (Concessions & Catering):

Under the guidance of the Manager, Food & Beverage, the Assistant Food & Beverage Manager (Catering & Concessions) will primarily oversee catering and concessions operations at the Jackie Robinson Training Complex (JRTC). This role involves planning, coordinating, and supervising day-to-day activities to ensure consistent, high-quality service and an excellent guest experience. The Assistant Manager will also focus on staff scheduling, training, and performance management, while upholding sanitation and safety standards.

Responsibilities:

  • Catering & Concessions Coordination
    • Oversee all aspects of catering and concessions, including setup, service execution, and breakdown.
    • Own all aspects of the Point-of-Sale (POS) system, including inventory and waste management, staff training, and POS screen layouts—optimizing operations, cost savings, and data accuracy.
    • Collaborate with the Manager, Food & Beverage, to develop menus and service plans tailored to specific events and guest needs.
    • Assist with menu costing, pricing strategies, and the evaluation of product performance for catered events and concession stands.
    • Monitor concession and catering inventory levels; place orders in coordination with the Manager, Food & Beverage, and receive shipments from vendors.
    • Maintain accurate records of supplies, equipment, and food and beverage products, ensuring cost-effective inventory management.
    • Communicate with vendors to negotiate pricing and delivery schedules for catering and concession items.
  • Staff Supervision, Guest Experience & Issue Resolution
    • Participate in the recruitment and onboarding of concessions and catering staff (e.g., bartenders, cashiers, cooks, and leads), ensuring adherence to food safety, guest service, and operational standards. Conduct regular coaching, performance evaluations, and feedback sessions to build a motivated and efficient team.
    • Manage staff scheduling to maintain adequate coverage for events, working closely with other leads and supervisors.
    • Interact with guests to ensure satisfaction, handle any complaints or concerns, and implement corrective actions when needed.
    • Support the planning and execution of special events or large-scale catering opportunities, ensuring a high level of client satisfaction.
  • Operational Excellence & Financial Oversight
    • Enforce health, safety, and sanitation regulations across all catering and concession areas.
    • Assist in establishing and updating standard operating procedures (SOPs) and ensure compliance among team members.
    • Collaborate with the Manager, Food & Beverage, to prepare operational reports, reconcile daily sales, and address any discrepancies promptly while monitoring catering and concessions financial performance, including budget adherence, cost control, and revenue growth opportunities.
    • Participate in semiannual cost-of-goods analysis to support effective pricing strategies and profitability.
    • Step in to support any Food & Beverage area when necessary to maintain guest service standards.
    • Perform additional tasks as assigned by the Manager, Food & Beverage.

Requirements:

  • Bachelor’s Degree in Hospitality, Business, or related field, OR a combination of relevant experience and education recommended.
  • Minimum of two (2) years of experience in a restaurant, concessions, or catering environment.
  • At least two (2) years of supervisory or team leadership experience.
  • Strong understanding of catering and concessions operations, including event execution and inventory management.
  • Excellent communication, leadership, and interpersonal skills; able to train, motivate, and manage a diverse team.
  • Proficiency in Microsoft Office Suite (Word, Excel, Outlook); familiarity with Point-of-Sale (POS) systems.
  • Ability to apply critical thinking and problem-solving strategies in fast-paced environments.
  • Ability to work irregular hours, including nights, weekends, and holidays, to support event schedules.
  • Must be able to obtain and maintain a valid food handler certification.
  • Valid Driver’s License with a clean driving record.
  • Physical stamina and mobility, including the ability to stand for extended periods, reach, kneel, and lift up to 50 lbs.

The Jackie Robinson Training Complex (JRTC), operated by Major League Baseball (MLB) located in Vero Beach, Florida, serves as a year-round hub for amateur development initiatives and events designed to diversify and strengthen the talent pipelines of baseball and softball. We are the permanent home to several signature youth-focused events and programs, such as the Nike RBI World Series and the Hank Aaron Invitational, which teach players how to succeed on and off the field. The historic facility, formerly known as Dodgertown, was renamed Jackie Robinson Training Complex in honor of its trailblazing namesake.
