Kitchen Operations & Equipment Innovation, Manager

  • Menu Innovation
    • Rapid Ops Test + Market Tests
      • Create and validate recipes for newly introduced recipes
        • Co-author recipes with Ops Services to ensure consistency in operational execution
        • Refine recipes to validate yields, confirm ideal portion weights, minimize waste and improve operational efficiency 
      • Create Tools + Technique cards for new operational techniques and processes
    • Fleet Launches (New Menu, Food Safety Standard and Supply Chain Changes)
      • Partner with the Implementation team to create and build a launch plan for the fleet. This includes the following: 
        • Huddle Agendas
        • Training Schedules
        • Training Videos
        • Attend post-launch training calls
    • Recipe Refinement
      • Identify, test and launch recipe changes that optimize COGS, labor,  operational efficiency and effectiveness within the Infinite Kitchen
  • Equipment + Smallwares
    • Rational Combi Oven
      • Create, test and validate oven programs to ensure consistent, final cooked ingredients
      • Push oven programs updates to stores for tests + fleet launches
      • Research improvements in quality, speed, and efficiency for current oven programs
    • Kitchen Equipment
      • Test new pieces of equipment to understand impact to final product quality and differences in operational behaviors
    • Smallwares
      • Test new smallwares to understand operational impact into current operations
      • Define portioning tools for new menu items and current item portion size changes 
  • Infinite Kitchen
    • Partner with the Automation team to test upcoming menu innovation to gather the following data points:
      • Dispenser type - simple or dynamic
      • Portion weight closely matches target portion weight
    • Review and R&D problematic ingredients (i.e. inconsistent dispensing + tube jams)
  • Food Safety Liaison
    • Partner with Food Safety to share and discuss food safety risks with any upcoming menu innovation
  • Supply Chain Liaison
    • Advise supply chain on optimizing ingredients, vendors, and packaging to improve cost of goods and reflect changes in operations tools
    •  
  • Store Development Liaison
    • Advise on any back of house and kitchen design to accommodate future menu innovation
  • Nutrition
    • Work in tandem with the QA team to calculate nutritional values for products once we have determined the final operational recipe

 

Qualifications:

  • Preferred 4-year degree in restaurant management, business administration, operations management or like field
  • 5+ years of experience restaurant and/or kitchen operations working directly with key stakeholders such as culinary, supply chain, operations, food safety, technology, and ops leadership
  • Strong penchant for technology and operations; ability to actively engage in sweetgreen’s technology group
  • Advanced restaurant operations knowledge primarily in one with a strong kitchen operations function
  • Strong depth of knowledge of kitchen equipment and supplies, and experience with a large vendor network
  • Strong knowledge of inventory management systems (e.g. NetChef Enterprise)
  • Highly analytical approach to problem-solving using both qualitative and quantitative data; natural curiosity and desire for continuous improvement.
  • Advanced MS suite user with Excel mastery and Google suite of apps
  • Excellent communications skills with the ability to persuade stakeholders with sound analysis and combined expertise 
  • Service-minded approach to the work being highly sensitive to the needs of operations

Starting salary range based on experience
$83,000$119,000 USD
